Struklji: A Culinary Journey Through History and Preparation

Historical Origins:

Struklji, a traditional Slovenian dish, traces its roots back to the 16th century. Its name, derived from the Slovene word “struga”, meaning “to fold”, aptly captures the dish’s unique preparation technique. Initially, struklji were filled with buckwheat or millet groats, reflecting the region’s agricultural heritage. Over time, the fillings evolved to incorporate a wider range of ingredients, such as cheese, walnuts, apples, and poppy seeds.

Traditional Preparation:

The preparation of struklji is an intricate process that requires patience and skill. The dough, made from a mixture of flour, water, salt, and eggs, is rolled out into thin sheets. The fillings, prepared separately, are then spread onto the dough, which is subsequently rolled or folded into various shapes.

Types of Struklji:

The versatility of struklji allows for numerous variations, each with its distinct characteristics:

  • Potica: A festive, rolled pastry filled with a rich walnut or poppy seed filling.
  • Orehova Potica: A sweet strudel filled with a delectable walnut filling.
  • Vilinke: Delicate, bite-sized dumplings made with a cottage cheese filling.
  • Ocvirkove Povitice: Savory pastries stuffed with cracklings (fried pork rinds).
  • Zeljni Struklji: A hearty dish featuring cabbage filling.

Preparation Steps:

For the Dough:

  1. In a large bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, and 2 eggs.
  2. Gradually add 1 cup of warm water while mixing until a soft, elastic dough forms.
  3. Knead the dough for 5 minutes until it becomes smooth and pliable.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.

For the Filling:

The filling can vary greatly depending on the desired variation of struklji. Here’s an example filling for a cheese filling:

  1. In a bowl, combine 1 pound of ricotta cheese, 1 cup of grated hard cheese (such as Parmesan or cheddar), 1 egg, 1/4 cup of chopped parsley, and salt and pepper to taste.
  2. Mix well until all ingredients are thoroughly combined.

Assembly:

  1. Divide the dough into 6 equal pieces.
  2. On a lightly floured surface, roll out each piece of dough into a thin sheet, approximately 12 inches by 9 inches.
  3. Spread the filling evenly over the dough, leaving a 1-inch border around the edges.
  4. Roll the dough up tightly, starting from one of the long sides.
  5. Pinch the edges to seal the roll.
  6. Place the struklji in a greased baking dish.

Cooking:

  1. Preheat oven to 375°F (190°C).
  2. Bake the struklji for 30-35 minutes, or until golden brown.
  3. Let the struklji cool slightly before slicing and serving.
